Chocolate Peanut Butter Overnight Oats

Today’s workout was quite a sweaty one! I wasn’t doing anything particularly crazy, but there’s something about interval training that leaves me looking like a hot mess.

I began my workout with 15 minutes on the stair master reading the latest issue of Better Homes and Gardens which left me feeling like my own apartment looks like an absolute dump heap. I can’t wait for the day when Ryan and I have our own home to decorate and organize! (Maybe in North Carolina!? We just need to convince our families to move.)

After my time on the stair master, I hopped on the treadmill to complete this interval workout:

 

Minutes Incline Pace
0 – 5 10.0 4.0
5 – 20 2.0 Alternate 4.5 for one minute, followed by 8.0 for one minute
20 – 25 10.0 4.0

Since I typically receive questions about how many miles I cover in my random treadmill workouts, here are my stats:

Covering slightly more than two miles when I only ran for seven of the 25 minutes isn’t too shabby if you ask me!

I rounded out my workout for the day with 10 minutes on the elliptical and a short walk with Miss Sadie.

Breakfast

Breakfast this morning was easy peasy thanks to some legwork last night.

Before going to bed I combined the following:

  • 1/2 c. old fashioned oatmeal
  • 1 1/2 tbsp. chia seeds
  • 1 c. almond milk
  • 1/2 tbsp. cocoa powder
  • 1 tbsp. peanut butter

I simply grabbed my prepped overnight oats from the fridge, added a spoonful of chocolate PB2 to the mix and chowed down this morning while reading blog emails (thank you so much to Laura, Jane, Andrea and Kristen for your amazing email guides for my trip to Europe!) and typing up this post.

    Hi, I do overnight oats a lot too but your bowls are a lot more full and fluffy than mine, is there a trick? mine kind of shrink and are about half the size of a bowl cooked the regular way.

    yes! move to NC!!! my parents moved to asheville when I was in college, then I moved here when I graduated, and now my sister is looking for a job to move here!!! It’s the place to be 😉

    i bought toasted carob powder from whole foods… I was wondering if I can substitute this instead of cocoa powder?? what type of cocoa power you use also!?

      i use hershey’s dark chocolate cocoa powder. i’ve never tried carob powder!

    The oats look so delicious! A question for you though… do you usually have for a pre-workout meal? I’m thinking of switching my workouts to early morning, but I’m not sure how to fuel accordingly!
